SOAR CREAMY MEXICAN CHICKEN

Ingredients
  

  • 5 Boneless Chicken Breasts
  • 1/2 Medium Onion Chopped
  • 1 C Salsa
  • 1 C Sour Cream
  • 1.5 C Shredded Mexican Cheese
  • 2 Tbsp Butter
  • 2 tsp. Sea Salt
  • 1 tsp Black Pepper
  • 2 tsp Chili Powder
  • 5 Splashes Hot Sauce Cholula is what I used
  • 1 tsp Cumin
  • 1 Tbsp Onion Powder
  • 1 tsp Garlic Powder

Instructions
 

  • Preheat oven to 350 degrees
  • Heat 1 T butter in a large cast iron or nonstick pan until very hot but not burning the butter
  • Season Chicken breasts lightly with sea salt, black pepper, and garlic powder
  • Saute the chicken breasts in the butter until both sides are browned but not cooked through, just enough to sear in the juices
  • Place the chicken breasts into a greased 9x13 pan
  • Once chicken breasts are browned, saute the onions in the butter left in the pan
  • After onions are cooked, scrape everything from the pan and drizzle all of the pan ingredients including onions on top of the cooked chicken breasts
  • In a separate bowl, mix together sour cream, salsa, spices, hot sauce and half of shredded cheese. Pour this evenly on top of the chicken.
  • Top with the remaining 1/2 of shredded cheese and olives
  • Bake at 350 degrees for 1 hour

Notes

Enjoy this with Cauliflower rice or over sautéed spaghetti squash served with a side salad.
