
SOAR CREAMY MEXICAN CHICKEN

Equipment
- 9 x 13 Pan
Ingredients
- 5 Boneless Chicken Breasts
- 1/2 Medium Onion Chopped
- 1 C Salsa
- 1 C Sour Cream
- 1.5 C Shredded Mexican Cheese
- 2 Tbsp Butter
- 2 tsp. Sea Salt
- 1 tsp Black Pepper
- 2 tsp Chili Powder
- 5 Splashes Hot Sauce Cholula is what I used
- 1 tsp Cumin
- 1 Tbsp Onion Powder
- 1 tsp Garlic Powder
Instructions
- Preheat oven to 350 degrees
- Heat 1 T butter in a large cast iron or nonstick pan until very hot but not burning the butter
- Season Chicken breasts lightly with sea salt, black pepper, and garlic powder
- Saute the chicken breasts in the butter until both sides are browned but not cooked through, just enough to sear in the juices
- Place the chicken breasts into a greased 9x13 pan
- Once chicken breasts are browned, saute the onions in the butter left in the pan
- After onions are cooked, scrape everything from the pan and drizzle all of the pan ingredients including onions on top of the cooked chicken breasts
- In a separate bowl, mix together sour cream, salsa, spices, hot sauce and half of shredded cheese. Pour this evenly on top of the chicken.
- Top with the remaining 1/2 of shredded cheese and olives
- Bake at 350 degrees for 1 hour
Notes
Enjoy this with Cauliflower rice or over sautéed spaghetti squash served with a side salad.
