SOAR Hot Tomato Sausage Cauli Rice (THM S)

Hot tomatoes are a new thing with the THM plan after a recent podcast where Pearl explained all of the benefits of how heating a tomato raises the lycopene. This recipe delightfully incorporates the warmth of the tomatoes and the depth of the other rich foods for a delightful S dinner.

  • Instant Pot

Ingredients
  

  • 2 Tbsp Butter
  • 1 Tbsp Grapeseed Oil
  • 1 Package Italian Sausage Links Diced into round fat quarter sizes
  • 1/4 tsp. Smoked Paprika
  • 1/4 tsp Onion Powder
  • 1/4 tsp Garlic Powder
  • 1/8 tsp Sea salt
  • 1/8 tsp Black Pepper
  • 1 bag Cauliflower Rice
  • 1 c. Cherry tomatoes
  • 1 c Spring Mix

Instructions
 

  • Saute your butter and oil in the instant pot until heated.
    Add in your diced rounds of sausage and cook until browned.
    Add seasonings and then throw in cauli rice and tomatoes.
    Put the lid on and place on high pressure for 2 minutes and make sure to quick release so it doesn't cook too much.
    Arrange your spring mix next to the main dish in a bowl and garnish with fresh herbs and a dollop of sour cream with a splash of hot sauce to your liking!
    You can easily double this recipe in your instant pot for a larger family.
